For the Pasta:

2oz dry pasta

For the Sauce:

1/4 cup Cashews (not roasted)

1 tbsp chopped Yellow Onion

1 clove Garlic

1/3 cup Unsweetened Plain Almond Milk

1 tsp Nutritional Yeast

Juice from 1/4 Small Lemon

Dash of Salt

For the Toppings:

A few sprigs of Parsley, finely chopped

5 Cherry Tomatoes, cut in half (or quarters)

Black Pepper

Chili Flakes

Optional: Add 1 serving of Gardein "Chicken" Tenders (adds 100 calories, 8 carbs, 4.5g fat, and 8g protein)

Add 1 cup chopped and steamed broccoli (adds 31 calories, 6 carbs, 0.3g fat and 2.6g protein)


For the Pasta:

Cook according to package directions.

Drain water, transfer to a bowl and set aside.

For the Sauce:

While pasta is cooking, place a pot with 2 cups of water and a pinch of salt on the stove, and bring to a boil.

Add cashews and boil for about 5 minutes (sometimes a lavender-colored substance will come to the surface; this is normal).

Drain all water from cashews and transfer to a blender with remaining sauce ingredients.

Blend on high until velvety-smooth texture is achieved. If too thick, slowly add a little splash of almond milk.

Assemble the Bowl:

Place cooked pasta in bowl.

Pour sauce over top.

Garnish with sliced tomatoes, chopped parsley, black pepper and chili flakes.
